Abstract
This report presents the results of a research effort geared towards the development of a planning tool which brings to the decision-maker's attention the various costs involved in operating a health-care foodservice facility. The research has yielded two foodservice configuration models: a classification model (BMKPHD) and an interactive foodservice configuration planning model. The BMKPHD classification model is a novel classification scheme based on the presence or absence of basic foodservice components. It is an attempt to minimize the confusion brought about by present-day equipment-based classification schemes. Furthermore, the BMKPHD scheme acts as a catalyst for planners / decision-makers by providing other foodservice configurations which without the model, may be overlooked. The interactive planning model is designed as a user-friendly game, which guides the user in considering several key factors that are relevant in the design of foodservice configurations, starting from the menu planning process to the personnel allocation process. The model takes the inputs of the user, together with the data in the various developed databases and using the techniques of Materials Requirement Planning, Dynamic Programming, Engineering Economy and Simulation, calculates the annualized costs of operating the foodservice facility. Through the use of this planning tool, foodservice planners, operators, educators and students can simulate the effect of varying parameters such as menu mix, equipment mix, component mix, processing mode and personnel mix on the annualized cost of running a hospital foodservice facility. This report also discusses the various concepts used in this interactive planning model. It presents the structure of the model, the structure of the data entry programs which create and maintain the databases that support the planning model and the structure of the database used by the model.
